Tea Smoked Chicken
This is a delightful way to prepare chicken breast. Tea smoked chicken is delicious served simply with brown rice and veggies but also makes a nice, smoky addition to soups and salads.
1/4 cup loose black tea
1/4 cup sesame seeds
1/4 cup raw sugar
1 split chicken breast, bone and skin removed
1. In a small bowl stir together tea, sesame seeds, and sugar. Fold a piece of tinfoil large enough to hold the tea mixture and place in the center of a wok with a tight fitting lid. Place a rack or steamer basket with legs inside the wok. The bottom of the rack should be 1-3 inches away from the tea. Heat over a high flame until the tea begins to smoke, stirring occasionaly. Reduce heat slightly. The tea should be smoking gently.
2. Place chicken breatsts on top of rack or steamer basket. Cover the wok and smoke chicken until it is well browned and springs back to the touch, about 20-30 minutes.
3. Remove chicken from wok and slice thinly.
