Banana Bites!

This may be the most fool proof and versatile “healthy” dessert ever. It’s a simple combination of mashed bananas, rolled oats, ground almonds, and baking powder, leaving you with endless options for flavors. Throw in chocolate chips, dried fruit, shredded coconut, or your favorite spices. Tonight I made them with dried blueberries and nutmeg.

Blueberry Banana Bites
Makes about 2 dozen

2 cups rolled oats
2/3 cup ground almonds
1 teaspoon baking powder
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon salt
1/2 cup dried blueberries
3 large, very ripe bananas
1/4 cup olive oil
1 teaspoon vanilla extract

In a large bowl, stir together the dry ingredients, plus the dried blueberries. In another large bowl, mash together the bananas, oil, and vanilla. Pour the banana mixture over the oatmeal mixture and stir until just combined. Drop tablespoons of the cookie dough onto parchment lined baking sheets. Bake at 350 degrees F for 15 minutes. They should be lightly browned. Transfer to a wire rack to cool.
